Pre-Game Granola Bars



Granola bars are a great pre-fueling snack! Making your own granola bars can be simple and requires no cooking. Check out the recipe below. This bar recipe can also be rolled into balls if preferred.


Makes: 8 Bars

Serving Size: 1 Bar


Ingredients:

1 cup very smooth creamy natural peanut butter , or almond butter

2/3 cup honey

1 teaspoon vanilla extract

Heaping 1/2 teaspoon sea salt

2½ cups whole rolled oats

1/3 cup mini chocolate chips (other great ideas include dried cranberries or cherries, raisins)

3 tablespoons pepitas or crushed peanuts or cashews



Directions

  1. Line an 8x8 baking pan with parchment paper. This will help your bars not stick to the pan after they have chilled. You can always use an aluminum pan.

  2. In a large bowl, stir together the peanut butter, honey, vanilla, and salt, until smooth.

  3. Next, add in your oats, chocolate chips (or dried fruit) and the pepitas (or nuts). The mixture might seem dry at first, but keep stirring and it'll come together. Stir to combine.

  4. Spread and press firmly into your pre-prepared pan.

  5. Take a second piece of parchment paper and a drinking cup to help roll flat your mixture.

  6. Chill for at least 1 hour, then slice into bars.

  7. Store bars in the fridge.
