Cinnamon Apple Quinoa Breakfast

Not really an oatmeal person, but like the idea of a hot one bowl breakfast. This Cinnamon Apple Breakfast Quinoa is a healthy & gluten-free option for starting your day!


Serving size: 2


Ingredients

1/2 cup quinoa, dry

1 1/2 cups water

2 large apples

2 teaspoons cinnamon

Honey for topping


Instructions

  1. Take your apples and chop them into bite-sized pieces.

  2. Add quinoa, water and apples to a sauce pan. Bring to a boil, cover and reduce to simmer for 20 - 25 minutes. The apples will be soft and the quinoa will have absorbed the water.

  3. Stir in cinnamon and transfer mixture to two bowls.

  4. Drizzle with honey and sprinkle with additional cinnamon (if desired).

    1. other great toppings include topping with almond slivers or nutmeg.

    2. not a big apple fan swap for blueberries or bananas. To change up the recipe add banana or blueberries after cooking the quinoa

    3. Need more protein add a scoop of your favorite protein powder to amp it up!
