Blueberry Banana Protein Muffins

Ingredients

1 1/4 cups whole wheat flour

1/2 cup vanilla protein powder

1 tsp baking powder

1 tsp cinnamon

1/4 tsp salt

1 medium ripe banana

3/4 cup almond milk

1 tsp vanilla

1 large egg

1/3 cup butter (lightly melted)

1/2 cup blueberries


Instructions

  1. Preheat the oven to 350 degrees F.

  2. Mix dry ingredients in a large mixing bowl- flour, protein powder, baking powder, salt, and cinnamon together in a large mixing bowl.

  3. In a separate bowl, mash the banana.

  4. Add in the milk, vanilla, egg, and butter and whisk together.

  5. Pour the liquid ingredients into the dry ingredients and mix just until combined (making sure not to over-mix the batter).

  6. Gently fold in the blueberries. (watch out you don't want to smash and mush your berries)

  7. Mix batter until light and fluffy.

  8. Pour into a lined cupcake or muffin tin and bake for 30 minutes (or until a toothpick comes out clean).
